Oh! one more thing the sturgeon that are sold in Thailand is not the same species as white sturgeon (Acipenser transmontanus)
Yes I was thinking of pointing that out, I know in Thailand we definitely don't have the white sturgeon but the ones we have (imported from China and Taiwan) are another breed, but because I see so many variations I believe its possible they are mixed breeds. Not sure but I think I heard somewhere that it was a cross between a type of sturgeon and sterlet to cause a breed that produces eat and meat faster but grows to a smaller size.
